Sugar Cookies With Berries And Cream On The Keto Diet

With the Fourth of July approaching, you’ll want to have some festive desserts prepared for the festivities. Impress your friends with these Keto Sugar Cookies packed with cream and berries while staying on track! Berries and Cream Keto Sugar Cookies

A simple vanilla sugar cookie with fresh berries and a zesty cream cheese filling.

12 tiny cups of soup

Time to prepare: 10 minutes

Instructions:

Cupcakes of cookies

  • Almond flour, coconut flour, erythritol, baking powder, and salt are mixed together. Mix until everything is well blended.

  • Combine the vanilla, egg, and butter in a mixing bowl. Cut the butter into the flour mixture by hand, or use a food processor to blend on the pulse setting.

  • Refrigerate the dough for at least 60 minutes before using it.

  • Preheat the oven to 375 degrees Fahrenheit.

  • Divide the dough into 12 balls after it has been refrigerated.

  • Using coconut or avocado oil, spray a muffin pan. Form a “cup” by flattening the balls and placing one into each muffin pan hole.

  • Preheat oven to 350°F and bake for 8-10 minutes, or until golden brown. To produce more of a cavity, press down the dough with a spoon or tiny glass.

  • Allow 5-10 minutes for the cookie cups to cool before transferring to a cooling rack.

  • Allow the cookie cups to cool completely before filling them.

  • NOTE: Makes 7 regular-sized muffin cups or 12 mini muffin cups.

Filling

  • In a medium mixing dish, combine cream cheese, sour cream, stevia, and vanilla essence. Beat till frothy and mixed with a hand mixer.

  • To chill the filling, place it in the refrigerator for 30 minutes.

  • Fill each cookie cup with 12 – 2 teaspoons sour cream mixture.

  • Add a few berries to the top of each cookie cup.

  • Serve right away and enjoy. It’s best to keep it in the fridge for up to 5 days in an airtight container.
