What is a Mug Cake, exactly?

Over the last few years, mug cakes have become a popular internet fad. It generally refers to any cake that can be cooked fast in the microwave (usually in a few minutes or less). The word “mug” refers to the coffee mug in which these delectable cakes are traditionally baked.

We chose to develop a variety of flavor options for your keto mug cake because we are major lovers of quick and easy recipes.

This keto mug cake recipe comes with a foundation and five flavor options. Almond flour or coconut flour can be used to make the basis. You can be as creative as you want with the flavorings for your mug cake, but we’ve included five alternatives in this recipe:

  • Add 1-2 teaspoons of peanut butter to the Keto Peanut Butter (Peanut Butter) Mug Cake.
  • Add 1/4 cup fresh blueberries to the Blueberry Mug Cake.
  • 1 tablespoon cocoa powder and a pinch of extra sweetener for Keto Chocolate Mug Cake
  • 1 tablespoon pumpkin puree and 1/4 teaspoon pumpkin pie spice – 1 tablespoon pumpkin puree and 1/4 teaspoon pumpkin pie spice – 1 tablespoon pumpkin puree and 1/4 teaspoon pumpkin pie spice – 1 tablespoon pumpkin puree and
  • Don’t add anything to this Keto Vanilla Mug Cake! The vanilla taste is already present in the foundation recipe. If you want a stronger vanilla flavor, add a little more vanilla extract.

We utilize a vanilla base with nut and nut-free versions for this recipe. We also wanted to offer more flavor options than vanilla, which is why we created these delicious varieties.

Vanilla

Sometimes the most simple flavor is the best. Simply follow the recipe and leave out all of the extra flavorings to make a keto vanilla cup cake. For a fun fall variation, use the vanilla recipe and add some walnuts or pecans, as well as a touch of cinnamon.

Blueberry

Dunkin’ Donuts used to be my go-to place for blueberry muffins. The muffins were over-sized, overflowing with blueberries, with the perfect pound cake texture and sugar sprinkled on top.

Look for companies with two or fewer ingredients to locate a keto-friendly peanut butter. They’ll all utilize peanuts, and some may even season their peanut butter with salt. You should stay away from sugary brands like JIF and Skippy.

For a richer peanut butter taste, add peanut butter powder to your mug cake.

Chocolate

The most popular flavoring option is this keto chocolate cup cake. We make this meal at least once a week after supper.

Because chocolate can be harsh, this recipe will require a small amount of additional sugar.

Pumpkin

If you like pumpkin spice and fall, you’ll enjoy this cup cake. When served with a latte, it’s spicy, sweet, and delicious.

Plus, thanks to all of the added fiber, pumpkin isn’t nearly as heavy in carbs as most people believe. Pumpkin has a low sugar content but is mildly sweet, thus the cake requires less sweetener.

When you simply add pumpkin to a cup cake, most people are unhappy with the flavor. This flavoring option gets its signature pumpkin pie flavor by adding pumpkin pie spice to the mix.

The moist texture you receive from the pumpkin is the greatest part of the pumpkin mug cake.

Instead of flour, use coconut flour.

Fortunately, we tested this mug cake in two different methods to determine the ideal coconut flour and almond flour ratios.

To get the appropriate ratios using coconut flour, we found that you only need around half the amount of almond flour. That implies you’ll need 1.5 tablespoons of coconut flour instead of 1/4 cup almond flour (4 tablespoons).

The cream adds extra fat and moisture to the cake that coconut flour lacks, so don’t be scared to add one extra tablespoon if you want the cake to be extremely moist.

Make it dairy-free by omitting the milk.

You certainly can, but it will not be as good. You’ll need to come up with a replacement for the butter and heavy cream.

  • Instead of butter, use coconut oil.
  • Instead of heavy cream, use almond milk or water.

When substituting almond milk or water for heavy cream, use half the amount.

Making the Best Mug Cake: A Step-by-Step Guide

In our keto days, we’ve cooked a lot of mug cakes and have assembled the finest tips and tactics for making the ideal mug cake every time. We made this base at least ten times to ensure that it was flawless. It doesn’t get much better than a gluten-free, keto-friendly, and sugar-free meal! Here’s how you master the art of mug cakes:

Butter should be melted.

The butter must first be melted. It will be easier to stir the remaining ingredients in if the butter is well melted in the microwave for 15-20 seconds.

You don’t want the butter to burn or become too hot. Simply melt it until it is entirely liquid and then put it away!

Combine the dry ingredients and set aside.

To avoid cooking your egg with the hot butter, proceed to the next step. Toss all of the dry ingredients into the melted butter and stir briefly. This provides a barrier between the heated butter and the egg you’ll be adding.

Remember to add the baking powder! It’s critical that your low-carb keto mug cake is fluffy and soft.

Add the egg and stir to combine.

We can now add our egg. I prefer to stir everything together with a fork since it eliminates one dirty dish from the equation. At this time, the mixture should be quite homogeneous. It’s not a big concern if there are a few clumps; the microwave will take care of them.

Add Your Favorite Flavorings

This isn’t always necessary to be the last step. If you’re using powdered flavorings, mix them in with the dry ingredients first. Now is the moment to add any finishing touches, such as blueberries, raspberries, nuts, or sugar-free chocolate chips.

45 to 75 seconds in the microwave

This is the most crucial step in making the ideal mug cake. The amount of time you microwave this will determine the moistness and tenderness of your cake.

Because every microwave is different, it’s difficult to say how long yours will take. When the mug cake begins to rise past the rim of your coffee mug, it’s done, according to me. If you take it out now, the middle will be soft and little undercooked (sort of like a lava cake).

Using the Oven to Make a Mug Cake

You can make mug cakes, but you’ll need to use an oven-safe dish or ramekin. The texture may differ from that of a traditional cup cake. Place in a 350°F oven for 15-20 minutes to cook. To make sure it’s fully cooked, use a toothpick to test it.

Toppings that are Keto-Friendly

Topping a low-carb mug cake is entirely up to you, but that doesn’t mean we don’t have some ideas!

The following are some of our favorite mug cake toppings:

  • Whipped Cream– When it comes to any type of cake, whipped cream is the greatest. Yes, a scoop of keto ice cream is exceptionally delectable, but you might not be able to stop once you start! Make our keto homemade whipped cream instead!
  • Sugar-Free Chocolate Chips– Another deceptively tasty topping is sugar-free chocolate chips. They’re compatible with all of these mug cakes, and several brands now offer keto white chocolate options as well. This goes well with both the chocolate and peanut butter keto mug cakes.
  • Strawberries, blueberries, and raspberries are excellent additions to mug cakes since they are sweet but tart enough to balance out the sweetness of the mug cake.
  • Nut Butters– This can be any of your favorites; we adore peanut butter and almond butter, but sunflower seed butter is a terrific nut-free option.

  • Melt the butter in a mug for 30 seconds, or until a liquid.

  • After that, combine all of the dry ingredients and stir well.

  • To avoid clumping, add the cream, vanilla, and egg and blend again.

  • Cook for 45-75 seconds in the microwave, or until the mug cake is fully cooked.

  • Allow it cool somewhat before adding the toppings.

To Create Every Other Variation

  • Prepare the foundation as directed above *DO NOT COOK YET*.

  • Simply combine all additional ingredients, depending on the base of choice, once the batter is ready.

  • Microwave the combined batter for 45-75 seconds, or until thoroughly cooked.
