Keto Crockpot Apricot Glazed Party Meatballs | Exclusive Recipe

When I was in culinary school, we had to make a crock pot dessert, and it was as simple as making a cake. I was a little bit proud to have made a crock pot cake, but I was surprised that no one else seemed to make a crock pot dish. When I was trying to think of a keto crock pot recipe, I had to think about what to make. I wanted something that I could make in large quantities for a party, so I decided to make a meatball recipe. The recipe turned out amazing, and is super simple to make.

If you have been following my blog for a while, you know that I am very big on meatballs. I have made so many variations of them, that I can’t even recall all of them. I have been having a lot of fun experimenting with different spices, herbs, and sauces and I have come to the conclusion that meatballs are an amazing thing to get your hands on.  These meatballs are a big hit at family gatherings and I have even made them to pass as appetizers on holiday tables.

Keto meatballs for a party with apricot glaze

Preparation time: 20 MINUTES

Cooking time: 3 HOURS

Total time : 3 HOURS AND 20 MINUTES

For the meatballs :

  • 1 1/2 pounds ground beef (I use 85/15).
  • 1/2 pound ground pork
  • 3 Esslöffel sehr fein gewurfelte Zwiebeln
  • 1 large clove of garlic, finely chopped
  • 2 eggs
  • 1/4 cup whipped cream
  • 2 teaspoons dried parsley
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg

For the glaze:

  • 1/2 cup zuckerfreies Smuckers-Aprikosen-Konfit
  • 1/2 cup sugar-free barbecue sauce, original (I use G Hughes, a traditional sugar-free barbecue sauce)
  • 1 tablespoon soy sauce
  • 2 to 3 teaspoons chili garlic sauce, depending on the heat level (found in the Asian section of the supermarket)

Preheat the oven to 400 degrees. Prepare a baking sheet and line it with aluminum foil. Set it aside.

For the glaze:

Mix all frosting ingredients in a medium bowl with a whisk or hand mixer until well blended. Set it aside.

For the meatballs :

Put ALL the ingredients for the meatballs in a large bowl. Using your hands or a hand mixer, mix the mixture on low until fully blended. The mixture will be very sticky. Don’t stir too much.

One at a time, take a little less than a tablespoon of the mixture into your wet hands (this really helps prevent the meat from sticking to your hands). Shape each tablespoon into a ball 1 to 1 1/4 in diameter. Place each patty on the prepared baking sheet. Ideally, you’ll have a total of 45 meatballs. Place the meatballs in the preheated oven on the middle rack for 15 minutes.

Transfer the cooked meatballs from the baking sheet to the slow cooker. Pour the prepared glaze on top. Gently mix the meatballs into the glaze. Cover and cook 2-3 hours on high heat or 6-8 hours on low heat. Stir from time to time.

Allow to cool slightly before serving. The meatballs can be served warm or at room temperature. Have fun!
