Pork with a Sweet and Sour Flavour

Crispy pork bits drizzled with a sugar-free sweet and sour sauce.

Time to prepare: 25 minutes

Instructions:

  • Combine pork rinds, ginger, onion powder, salt, and pepper in a large mixing basin. Mix thoroughly.

  • Whisk the eggs together in a separate basin.

  • Pork should be cubed into 1 inch cubes (as even as possible for faster cooking), then dipped in egg and rolled in pork rind mixture. Place on a serving dish. 

  • Heat the oil in a cast iron skillet over medium heat. Pork should be fried in batches. Approximately 2 minutes on each side (pork should not have any pink in the middle). To absorb part of the oil, place it on a paper towel lined plate.

  • Make the sauce: Heat a medium saucepan over high heat. Add all sauce ingredients to the saucepan. Stir frequently, allowing it to boil and thicken and to not burn.

  • Pour the sweet and sour sauce over the meat that has been cooked. Coat the pork in flour and serve with cauliflower rice and steamed broccoli, if desired. Sprinkle with sesame seeds and green onions, if desired.
